Easy sweet shortbread – pie crust recipe
Sweet shortbread pie crust is an easy and a very basic recipe which will help you rock your pie treat.
A pie can be delightful only if the crust is well made. I just can’t tolerate the soggy bottoms.
Crusts play such an important role when making pies and tarts. While we often think of them as only a shell to hold a filling, we also need to think about how their taste and texture will pair with that filling. One of my favorite crust recipes is this Shortbread Crust, that has a buttery sweet flavor and a crisp texture. It is like a shortbread cookie only in tart form.
It goes well with cream fillings, fruit fillings, chocolate fillings, and even nut fillings. I made a lemon meringue pie with the same crust and it came out fantastic. It is quick and easy to make, only needs 15 minutes of chilling time in the freezer, and takes under 15 minutes to bake. Definitely a good recipe, its a keeper.

1. 1 Cup all purpose flour
2. 1/3rd cup of icing sugar
3. 100 gm of chilled and cut into cube butter
Lightly butter a 9 inch tart pan with a removeable bottom. In a food processor place the flour, sugar and butter. Pulse until the ingredients starts to clump together. Transfer the prepared batter on to the tart pan and gently press on to the sides and the bottom. Evenly spread, and use back of a spoon to smoothen the surface.
Pierce the bottom of the prepared tart with a fork. It prevents the pastry to puff up when baking. Cover with a plastic wrap and place the prepared pastry in the freezer for 15 minutes to chill. This prevents the shrinking while baking.
Preheat the oven at 220* C (425*F) and bake the chilled pastry for 15 minutes. Until golden brown that you desire to see.
Remove from the oven and cool on a wire rack. The tart shell is ready to be filled when cool.
