Today is a breakfast recipe for savoury pancakes. These are super healthy, delicious and definitely make a very satisfying meal. These pancakes are gluten free, and I have two versions for you of the same recipe.
One is without egg and is similar to a wrap (the thinner pancake)
The other is thick like a pancake with eggs.

Without creating any confusion, let me take you through this. The gluten-free flour, I have used to create these pancake is called Kwik Mix. I have quite a few recipes using same flour posted on my blog earlier. When Namrata launched this healthy Kwik Mix flour, she was confident about the versatility. I am working with her discovering recipes using it, which are easy to understand/prepare and of course are healthy. So I try out many recipes/ideas/ versions of dishes that can be prepared using Kwik Mix flour.
In the process of creating, I succeed and lose. But whatever good (importantly delicious) comes out of my kitchen and is approved by family (they are the critics) is what I share with you here.

Just to brief you with the nutritional content of the Kwik Mix flour
Kwik Mix Flour from Kadhali, which is Gluten-Free, Protein-Rich, Healthy flour. The flour is a mix of —
- Banana flour – is a probiotic, high in RS -2 starch, ideal for diabetics n celiac patients.
- Jowar flour – high in proteins, dietary fibre, calcium, iron, potassium, phosphorus.
- Brown rice flour – high in magnesium; good for the heart, aids digestion, helps circulation
- Tapioca flour – aids digestion, helps circulation.

Healthy Gluten-free Wraps
Ingredients
1 cup of Kwik Mix flour
3/4th cup of milk
1/2 cup of chopped dill leaves

1/4th cup of chopped spring onion (only green part)
Salt to taste
green Chillies
Oil to drizzle on the pan for cooking
For the stuffing
I have used achari paneer along with slightly sautéed cherry tomato and fresh greens
For dipping sauce
4 tablespoon Soy sauce
4 tablespoon of rice wine vinegar
2 teaspoon of sesame oil
2 cloves of garlic minced
A pinch of chilly flakes
Method
For wraps –
Mix all the ingredients together in a big bowl, using a wire whisk.
Drizzle a small amount of oil on a nonstick pan Cello Prima Induction Base Non-Stick Aluminium Cookware Set, 3-Pieces, Cherry and spread a ladle of the prepared batter spreading it evenly, making it thin. Cook on the medium flame, till both sides, are done.
Stuff some acahri paneer on the middle of a wrap and add some fresh greens along with sautéed tomatoes. Serve hot and enjoy.
Mix all the ingredients to prepare dipping sauce to serve along.

Healthy Gluten-free Savoury Pancakes
Ingredients
For pancakes
1 cup of Kwik Mix flour
1 teaspoon of baking powder
1 whole egg
1 tablespoon of melted butter
3/4th cup of milk
1/4th cup of chopped dill
1/4th cup Chopped spring onion (green part)
Chopped green chillies
Salt to taste
Method
Heat a griddle or a non-stick skillet over medium-low heat. In a bowl, mix together dry ingredients. Beat egg along with milk, then stir in melted cooled butter. Add in seasoning, chopped dill, chopped chillies and spring onions greens.
Gently stir this mixture into dry ingredients, mixing only enough to moisten flour; don’t worry about a few lumps. If batter seems thick, add a little more milk.
Place a teaspoon or 2 of butter or oil on griddle or skillet. When butter foam subsides or oil shimmers, ladle batter, making pancakes of any size you like. Adjust heat as necessary; usually, the first batch will require higher heat than subsequent batches. Flip pancakes after bubbles rise to surface and bottoms brown, after 2 to 4 minutes.
Cook until the second side is lightly browned.
Serve hot with healthy dips and enjoy!
