Mango Cup Cakes = wow
So I tried these Cup Cakes and added Mangoes, which came out fantastic. Mango flavor is coming out very well in these cup cakes. Mango lovers-This one will be a right treat.
If we talk about the texture of the Cup Cakes it’s very soft and melt in the mouth. And the flavor is a BANG ON MANGO. These yellow beauties are a sight; I mean they look wonderful too. Best to treat your eyes as well as taste buds. These Cup Cakes will win your heart; they took mine on the very first bite.
My little daughter says a something about the Cup Cakes Which I don’t remember completely right now, but It something like –
Cross my heart, and hope to fly,
Stick a Cup Cake in my eye.

Funny, and a lovely saying. She loves mangoes and she loved the Cup Cake as well. She is my little darling, who can talk, talk and talk whole day.
Lets get back to the recipe so it’s very simple and easy to make. A good evening with friends and Yummy Cup Cakes will be great. Or an after dinner sweet treat, awesome.
The recipe is a basic Cup Cake recipe in which I added mangoes and little mango extract. Mangoes were cooked with a little sugar and vinegar. This is very personal, but I feel it is a good idea to cook the fruit a little then add in the cake. The cooking improves the flavor by reducing the moisture of the fruit and the cake does not get soggy either. One more thing I would like to share here is that don’t add mango pulp in the frosting you make – because the frosting will become very runny and you will not be able to decorate your Cup Cake very beautifully. Instead add a little food coloring and flavoring, which works great.

Recipe
INGREDIENTS FOR THE CUPCAKES
1. 3 Mangoes
2. 1/4 cup of sugar
3. 1 teaspoon of vinegar
4. One cup of all-purpose flour
5. 2 teaspoons of baking powder
6. A pinch of salt
7. 100 gm of soft unsalted butter
8. 2/3 cup of powder sugar
9. 2 eggs
10. Mango extracts
11. 1/4 cup of milk
METHOD
Cut the mangoes into small cubes, and cook them over medium heat in a heavy bottom pan, with the 1/4 cup of regular sugar, for about 3 minutes. Then add in the vinegar and a pinch of salt. Don’t over cook. Keep the cooked mangoes aside to cool.
Prepare your cup cake tray, and preheat the oven at 180*C. In a bowl sift together the flour, salt and baking powder. Keep aside.
In another bowl, beat the butter using electric hand mixer. Add in the sugar and beat again till pale yellow. Add in the eggs one by one and beat well.
TIP – Make sure your eggs are room temperature, before adding in the mix. Room temperature eggs the white and yolks will combine easier while whisking . This means that the eggs will disperse more evenly into the batter, making even cooking and lighter texture. Where as cold eggs give more dense cake.
To this butter and egg mix add half of the cooked mangoes and mix well. Now incorporate the dry ingredients to the mix, while alternating the milk and mix until just combined. Don’t over mix the batter
TIP – To incorporate the dry ingredients, don’t use the electric hand mixer, just use a rubber spatula and fold in the flour. The correctly mixed cakes will be light and airy, where as over mixed cup cakes will be dense.
Now spoon in the batter into your prepared cup cake tray.In between – add a little bit of cooked mango as well.
TIP-Never fill in more than 1/2 or 2/3 of your paper cup cake wrapper.
Bake at 180* C for about 20 minutes. Check the doneness after the cooking time. By inserting a toothpick in the center, if it come out clean, cup cakes are done.
Let the Cup Cakes cool on the wire rack for sometime. And by the time you can prepare your frosting.

INGREDIENTS FOR THE FROSTING
1.One cup butter, softened
2. 3 cups of confectioners’ sugar
3.One teaspoon of milk
4.One teaspoon of Mango extract
5. Few pieces of mango, cut thin for decorating
METHOD
In a bowl combine butter and sugar. Beat until blended. Add in the milk and mango extract and beat for an additional 3 to 4 minutes, until smooth and creamy.
Put the frosting in a piping bag and decorate your cup cakes. Enjoy the Mango cup cakes with everyone. They are best to be enjoyed the very same day.
