They say – A cookie is an easy bake .So i tried it .

and i have tried it countless times , with dozen of different recipes .

I have struggled with it .

But how to get those absolutely incredible ones ?

The biggest problem was , I was never sure about what to change , in order to get what i want .

So there were many taste – tests. I bought cookies from every possible outlet in the city .

I even went to the kitchen of a very popular bakery/ restaurant( In**go) and took a peek .

So here is my cookie recipe which is semi-scientific but mostly trial and error .

ingredients :-

1. 1 cup of flour

2. 1 cup of brown sugar

3. 1/2 cup oats

4. 1/2 rice puffs

5. Butter 100 gm

6. 1 tsp of baking powder

7. 1 tsp of corn starch

8. A pinch of salt

9. chocolate chips , raisins , chopped almonds

10. a little bit of milk only if required to combine the dough

Method :-

We have to mix all the ingredients . but point here is – mix it to minimum .

because the liquid in the dough will activate the gluten in the flour and the cookie will end up like a cake .

But make sure that the flour is fully incorporated .

A pinch of flour is essential – it amplifies  the chocolate taste and tones down the sweetness..

The best way to get more flavour , is to let the prepared dough sit in the refrigerator for at least 12 hours.

Must give space to the cookies,  while positioning them on the parchment sheet.

Bake the cookies at 180* C for about 20 minutes or till you get a liitle golden color on edges.

The right sugar, butter, flour ratio is must.

I absolutely love making these cookies . It’s exciting . but the fact is we love eating them more.
