I know, its crazy to stand in the kitchen nowadays. Here in Mumbai, it’s sticky and hot. Its been a week I got back from a holiday and this heat and the hot kitchen, makes me say again – OH! Give me a break.
So a holiday mood never ends. But to be honest, I was kind of missing my work. I have my travel stories to tell you, I was at Mom’s house first then went to a Place called Naggar, near Manali. The journey and the stay was peaceful, I was connected to nature to the local people and of course to the food. Here are few pictures I took in the journey.

So Toady to being with, I have a Lemon cheese Cake Summer Jar recipe for you. This is the easiest because I know, neither you nor I want to stand in the kitchen for long.
Even though easy, I am gonna give you few versions of the same dessert. One is made with cream cheese and another one is made using hung Yogurt. So if you are in a healthy mode, go for yoghurt version. If you have people friends coming over go for cream cheese version. The lemon curd is optional, but it adds a lot to the dessert.
Here is a recipe to make lemon curd at home, and I have both the versions for you. The eggless and the one with eggs.
What is really bringing up the flavour here is Ossoro Creamy lemon essence. Few drops made my dessert extra special. Ossoro is a good quality, actually, I am gonna call it an artisanal quality food fragrances/ aromas. A touch of Ossoro made my cheesecake speak of lemons.
The creamy texture and bright flavour will win you and your family. A perfect balance of sweet and sour. Because these can be made ahead of time and simply grab from the fridge and enjoy.
The healthy version
Use the same amount of hung yoghurt instead of cream cheese. Use a wire whisk to smoothen the yoghurt and add powdered sugar according to the taste. You can also skip the sugar and add honey instead. And to mask the flavour and texture, whisk 2 tablespoons of whipped cream to the yoghurt and whisk well. (2tablespoons of cheating is allowed) Don’t forget a drop or 2 of Ossoro creamy lemon.
At home nowadays my kids are all gaga about golden Oreos. So you can guess, golden Oreos are the base in my cheesecake jars. You can use any crackers/ biscuits as a base. Cadbury Golden Oreo Biscuits, Vanilla Crème, 150g
For the healthy version – Add the pitted dates to a small mini food processor bowl, with the almond meal and the desiccated coconut. Pulse until it starts to come together, scraping down the sides as needed.
1/2 cup of golden Oreos, crushed
Cadbury Golden Oreo Biscuits, Vanilla Crème, 150g
250gm of cream cheese, room temperature
Kraft Philadelphia Original Cream Cheese, 226g
1 cup heavy whipping cream
1/2 cup powdered sugar
3 to 4 drops of Ossoro creamy lemon
Ossoro Creamy Lemon, 30 ml
1 cup lemon pie filling
Additional crushed Oreos for garnish (optional)
Crush Oreos using a food processor, or use a rolling pin and a plastic bag to crush. Add a Spoonful to each of the 4 mason jars. Godskitchen 200ml (Set of 8) – Mason Jars With Colourful Lids, Regular Mouth, Dishwasher Safe, BPA Free
Using a wire whisk, beat the cream cheese for 30 seconds. Add 1/2 cup whipping cream, 1/4 cup powdered sugar and Ossoro creamy lemon and beat for 2 minutes or until smooth and creamy. Spoon two spoonfuls into each of the prepared jars.
Top each jar with two spoonfuls of lemon pie filling or lemon curd. Refrigerate for two hours or until serving.
Whip up rest of the heavy whipping cream and Place into a pastry bag fitted with a tip and pipe onto the jars.
Sprinkle with crushed Oreos and top with a lemon slice, if desired.
