A sophisticated and delicious plate of pesto pasta is enough to pamper anyone. Like many of you, I too have additional chores at home, allowing no loose time on hand to just chill. This pasta is one of my favourite treats and I happen to make it for dinner very often. It’s easy and quick to prepare and in the end, doesn’t leave me with a sink full of dishes to wash.

You can make pesto and keep it in the fridge for later use. In fact, I find it very convenient to have a jar of pesto in the fridge. Pasta on its own is wonderful enough to amuse the tastebuds but I went ahead and combined it with marinated cherry tomatoes. These bright vibrant cherry tomatoes adding a lot to the overall look. Which would be totally optional for you, depending on the time and availability of the ingredients. However, these cherry tomatoes added so much contrast to the richness of pesto pasta. Bringing in a pleasing tanginess giving a sense of balance to the palate. Which actually tempts you to relish more.
For marinated cherry tomatoes you just have to combine just 4 ingredients. The process couldn’t be easier! I hesitate to call it a ‘recipe’,. Call it a quick and easy side dish.
Rinse cherry tomatoes and cut them in half or quarters. It is easiest to slice with a serrated knife.
Using the flat side of your knife LOFA Love For Arcade Premium Kitchen Knife , smash peeled garlic and mince into a paste. Season with a pinch of salt and add to a bowl of tomatoes.
Add olive oil Del Monte Extra Virgin Olive Oil PET, 1L , and balsamic vinegar De Nigris Balsamic Vinegar, 500ml, Product of Italy , fresh basil. Mix to coat the tomatoes and allow to sit at room temperature for 1-2 hours.
Please taste and adjust the seasoning.
Boil the pasta according to the instructions mentioned on the pack. Save some of the pasta cooking water.
It coats everything nicely and creates a glossy pesto sauce that coats every bit of pasta. The starch in the water emulsifies with the pesto, which simply means the fat in the pesto + starch in the water thickens.
Another important tip when making this Pesto Pasta Recipe is to be sure not to rinse the pasta! Sometimes I spritz it with a little bit of olive oil to minimize sticking, but sticky pasta is good in this case because it helps the pesto sauce adhere and soak into the noodles!
Once you have adding pesto to the boiled pasta, don’t put it back on the flame. The freshness of the basil will fade off very quickly. The heat from the pasta is sufficient enough, we need that heat for further emulsification, but don’t heat any further.

- Once done, drain (do not rinse), return to dry pot, cover with a lid and set aside.Save 1/2 a cup of pasta cooking water.
- Add homemade pesto sauce and reserved cooking water stir into pasta until evenly distributed.
- Add in marinated cherry tomatoes and fresh basil if desired.
- Grate some parmesan on the top and serve hot.
