Tawa Pulao is one of the most popular street foods in Mumbai. It is made on a large tawa, (a griddle). Cooked rice is tossed and seasoned with pav bhaji masala along with vegetables. It’s an easy and simple pulao to make and tastes delicious. There is no hard and fast rule in preparing tawa pulao, every street-food vendor prepares in his own style Tawa Pulao. When made at home it obviously is healthier because you can be sure of the ingredients that went in the making.
This time I prepared Tawa pulao using Organic Red Rice instead of white rice. Red Rice is a variety of rice which is an unhulled or partially hulled rice that includes a red husk. Red rice has a nutty flavour and has a higher nutritional value. It is rich in fibre content, Vitamin B1 & B2, iron and calcium.
I have used Truefarm Organic Red Rice Truefarm Foods Organic Red Rice, 750g (Pack of 2)today and made an interesting Tawa Pulao. A complete healthy meal.
How to cook red rice:
It is very important to soak red rice before cooking – Wash the rice thoroughly, discard any dirt. Place in a bowl, cover with water. Soak for at least 2 hours.
To Cook: Fill about 3 cups of water in a large pot. Bring to a boil. Add salt to taste. Add one cup of soaked red rice. Bring the liquid back to a boil, then lower the heat to a gentle boil. Cook for about 8-9 minutes at a bubbly simmer.
Once you feel that the rice is done, drain the excess liquid from the rice (if any). Do NOT rinse. Discard the liquid.
Tawa Pulao is generally prepared on a big Tawa. However, when making at home, it is difficult to prepare on a small size tawa we use at home. So I used a regular wok to prepare pulao. And later when serving it, I heated small serving portions of the pulao on my iron griddle (Tawa) along with some butter. Served it hot, with onion tomato raita and pickle.
Boiled Organic Red Rice 3 cups
Truefarm Foods Organic Red Rice, 750g (Pack of 2)
3 chopped Tomato(chopped)
2 chopped Onion
1/2 cup boiled Green Peas
1/2 cup chopped boiled carrots
1/2 cup chopped boiled green beans
1 Capsicum chopped
1 tbsp Ginger garlic paste
1 tsp Organic Cumin seeds
4 tbsp Cooking oil
Fresh Chopped coriander leaves
2 tsp Pav bhaji masala
1/2 tsp Organic Turmeric powder
1 tsp Organic Red chilli powder
1/2 tsp of Organic coriander powder

1/2 tsp Garam masala powder
Salt to taste
Splash of fresh Lemon juice before serving
Butter to reheat
Heat oil in a pan, add cumin seeds and fry it for few seconds on medium flame. Add chopped onion and cook it for 2-3 minutes on medium flame, keep stirring in between. Add ginger garlic paste, mix it and cook it for a minute on low flame. Add tomatoes and cook. Cover the pan and cook it for 3-4 minutes on medium flame.
Add turmeric powder, red chilli powder and salt to taste, mix it well, cover the pan and cook it for a minute on low flame.
Add in boiled peas, carrots, beans and chopped capsicum and cook for another 5 minutes on medium flame. Add in pav bhaji masala powder and mix it properly.
Add boiled rice and, mix it cover the pan and cook it for 2 minutes on low flame. Add garam masala powder and fresh chopped coriander leaves, mix it properly. Cover the pan and cook it for a minute on low flame. Turn off the flame, tawa pulao is ready to serve.
To serve: heat a cube of butter on a tawa and add one portion of prepred pulao satue till hot, cook on high flame. Drizzle some lemon juice and serve hot with raita and enjoy!
