Now a few very important things that I would like to share are –
The correct mixing of ingredients, which is very crucial in making of an excellent scone. Use a pastry cutter or two knifes to cut the butter into the flour and then use your hands to bring the dough all together.Mixing by hand will prevent over mixing, other wise it will end up in a hard and doughy scone.
Another very important part of the recipe is that the butter should be cold so that when it is worked into the flour mixture – it will become small, flour coated crumbs and not a smooth dough. This will provide a wonderful, delicate, and flaky texture to the scones.
If you’re using frozen fruit be sure to drain your fruit very well before you mix it into your batter.
If you’re adding fruit, chocolate or other sweet ingredients to a basic scone recipe, use less sugar.
While shaping scones gently pat the edges of the scone to make it round. Don’t compress the dough.
Keep the scones as cold as possible until they are ready to go into the oven. This will make them rise better.
