Vegetarian Canapé Recipe

These Vegetarian Canapés are quick to prepare, turns out delicious, and looks superb when served. It is a perfect solution, for situations when the uninformed guest arrives. Especially during festivals.
My experience says we require quick fixes in the kitchen, during the festive season. This is one of those recipes that will make a thing go easy, smooth and elegant for you. It surely has made my life easy.

To make these delicious canapés you will require dips. One is made using sun-dried tomatoes and other is a paneer dip (healthy). These are very easy to make at home and can be served with various snacks. A sandwich, kababs, cutlets, bruschetta, and fried snacks. I served them with oven-baked potatoes the other day.

You will love both because they are intense in flavour and adds a lot to any dish. These are my favourite preps that I keep in my fridge because they are lifesavers. The rest is chopped vegetables and Canapé shells. Make the dips beforehand and keep them in the fridge to save time. To avoid unnecessary, confused and panicky kitchen situations.
I have used Canapés and they are easily available in the market. You can also use toasted garlic bread as a base to serve quick appetizers.

In the cavity of the canapé, there are some finely chopped bell peppers (red yellow, green) and a dollop of sun-dried tomato pesto and healthy paneer cream cheese dip with some microgreens on the top.

For these Canapés, I have used sun-dried tomato pesto. Which adds a lot of depth in terms of flavour and texture.
I am not sure if the name – sun-dried tomato pesto would be a correct name for this dip.
This is my version and is super quick to prepare. Click on this to know the trick.

Vegetarian Canapé – Herbed Paneer Dip
The other important part of the Canapés is my Herbed Paneer Dip, Healthier one. This is another fantastic flavour play and is healthy to indulge in. I do call it cheats dip because I have used homemade paneer and treated it in a way that it behaves like a real rich mayonnaise dip.
Honestly, I keep making such healthy dips for my kids at home, to cut down on ready to use sauces and dips.

Herbed Paneer Dip- The ratio in this recipe is super simple.
70% creamed paneer, 20% cream cheese and 10% mayonnaise.
Blend them and add in flavouring. You will have to check on the seasoning and adjust accordingly.
I have a few suggestions for flavouring – you can add pizza seasoning, a spoonful of sriracha, or schezwan, basil pesto, red-chilly sauce or add in minced sun-dried tomatoes. Play with the flavours and enjoy!

You will need creamed paneer for this recipe
How to cream homemade paneer – Make paneer using full-fat milk. Drain it in a muslin cloth. Tie up the ends of the cloth and rinse under cold water, so while rinsing curdled milk/ paneer don’t fall off.

Make sure to squeeze out all the water. And it should be like a stiff dough.
Once you have used all your muscle power to squeeze out the water, transfer it on a plate and mash it with hands. knead the paneer with the palm and make it smooth. It is very similar to the process of making Sandesh.
Creamy panner is ready to be blended with the rest of the ingredients.
The rest of the recipe is very easy. In a blender add creamed paneer, cream cheese and mayonnaise along with your choice of seasoning. Run the blender till you get a smooth creamy dip ready.
Remember the ratio, I had mentioned earlier- 70% paneer, 20% cream cheese and 10% mayonnaise.

Once you have the dips ready, you are free from the stress. I am quickly taking you through the recipe of Canapés. Hope you like it and make it at home.

Ingredients

1 cup Chopped bell peppers (red, yellow, green)
20 Canapés shells
1/2 cup herbed paneer dip
1/2 cup sun-dried tomato pesto
Microgreens

Method

Prepare the dips beforehand. Please refer to the above write up.
In a Canapé, shell add-in a spoonful of finely chopped bell peppers.
Put a dollop of sun-dried tomato pesto, and a dollop of Herbed Paneer Dip.
Garnish with Microgreens and serve immediately.
