Healthy Chocolate Chia Pudding

Healthy desserts are possible. Indulging, sinful, awesomely delicious desserts can be healthy too. This chocolate chia pudding here is a perfect example. All it takes is chia seeds, almond milk, cocoa powder, banana and a little amount of natural sugar (dates, stevia, honey, maple syrup or organic Jaggery powder Truefarm Foods Organic Jaggery Powder, 500g). You can choose any of these healthy sugar substitutes according to your personal likes or availability. 

Healthy Chocolate Chia Pudding

Chia means “strength” in the Mayan language, and chia seeds were known as “runners’ food” because runners and warriors would use them as fuel while running long distances or during battle. 

Chia seed is great for health and is a highly versatile ingredient. Today, I have used organic chia seeds, it is a Truefarms product. Chia seeds pack a wallop of omega-3 fatty acids, protein, dietary fibre, vitamins, minerals, and polyphenolic antioxidants. Hence, consuming chia seeds regularly helps in getting healthy skin, reducing signs of ageing, supporting the heart and digestive system, building stronger bones and muscles, and more.

I have been using chia seeds for long. Few ideas for you to include chia seeds in your diet. 

Chia seeds absorb water quickly. Place ¼ cup seeds in 1 cup liquid, stir well, and cover. Allow sitting for about 15-20 minutes until the texture changes to a soft gelatine. Add to smoothies and soups to boost nutrient value and create a thicker, more satisfying consistency.

They work as a great substitute for egg. For 1 whole egg, mix 1 tablespoon of whole chia seeds or 2 teaspoons ground chia seeds with 3 tablespoons water. Allow to sit for at least 5 minutes or until the mixture thickens. 

I also grow chia sprouts. Place chia seeds in a single layer (allowing enough space to grow) in a clay dish. Spray the seeds with water several times and cover with plastic wrap or a clear glass dish. Put in a sunny spot. Spray morning and evening until green sprouts appear, about 3-7 days. Use these micro-greens to garnish salads and sandwiches.

Sprinkle some on breakfast cereal (hot or cold) salads, soups, or stews, salad dressings, sauces, marinades, or cake/muffin/bread batter.

Commercially, they are also added to cereals, crackers, beverages, bread, and other baked goods to boost their nutritional value.

Chia seeds are an incredible ingredient, which most of us have not experienced yet. Adding it to everyday foods will benefit you in many ways. If you don’t prefer any of the above mentioned, just add some chia seeds to your water or to flavoured water. For now, this recipe of chocolate chia pudding is something you will enjoy. 

Healthy Chocolate Chia Pudding


1 1/2 cups almond milk 

1/3 cup of organic chia seeds
Truefarm Foods Organic Chia Seeds, 250g

1 ripped banana 

1/4 cup of unsweetened cocoa powder

2-5 tablespoon of maple syrup or 5-9 dates or 1/4th cup of organic jaggery 

1/2 teaspoon of ground cinnamon

Pinch of sea salt


Soak chia seeds in almond milk overnight, and keep in the fridge. 

In the morning add the sweetener of your choice. (If using dates, make a paste before adding to the recipe) 

{Soak the dates in hot water for some time and blend in the mixer till a paste consistency}. 

In a mixer add half of the soaked chia seeds with the chopped banana and cocoa powder. Blend it till a smooth consistency. You can add some more milk if required during the blending stage.  Blend until completely smooth and creamy, scraping down sides as needed. For reference, see the image above. 

To serve – In a serving jar/ or cup add the prepared creamy chocolate pudding in the base sprinkle some muesli and a layer of your favourite fruit. Then add another layer of almond milk soaked chia seeds on top of the fruit layer. Again top it up with more chopped fruits and some muesli. You can choose to add as many as fruits you like, to make it more delicious and healthy. 

The dessert has to be chilled before serving. Either you chill the prepared blended chocolate and almond milk dipped chia before, or you assemble the jars and chill it. Just make sure that muesli is added just before serving or it will lose the crunch. Enjoy it as a breakfast or as a dessert after dinner.
