It seems difficult when we decide to change our everyday flour with a healthier flour. For years maida (all-purpose flour) is been ruling the food territory. Now that, we are aware of the health hazards it brings along, most of us have started to move away from it. But I see a big gap between the healthy flours (newly acknowledged) our rigid tastebuds and recipes that can work. We are on our path to discover good recipes and I believe its a long-term project.
I desperately want my kids to have good quality healthy food and all they care about is taste. I guess, its a story in most of the houses today. I feel blessed that, my job is to develop recipes. I am 75% of the time in the kitchen trying out new food recipes. Sometimes, I get it right, and other times it is a mess.
Today is the story of success, I have this organic multigrain health flour.Truefarm Foods Organic Multigrain Health Flour, 500g Its a combination of ragi, jowar, oats, millet and almond flour. Its rich in fibre and is a source of protein too. In addition, it is high in magnesium, calcium, iron as well as vitamins B2 and B6.
I combined this power-packed multigrain health flour with grated cauliflower and lots of coriander. Cooked the prepared batter like waffles in a waffle maker. The outside of my savoury waffles was super crisp and inside was nice fluffy tender.
The recipe is super easy to prepare. Hope these images will help you get it right. I have added egg and buttermilk in the recipe as well. Which adds to the texture as well as to nutrition.
I also made this chia seed dipping sauce that adds a lot of flavours when served with savoury waffles.
Make sure you serve them hot, because that when the waffles are most delicious.
Chia seeds dipping sauce
Chia seeds dipping sauce:
1/2 cup freshly squeezed or store-bought orange juice
Half a lemon freshly squeezed
2 tablespoons olive oil
1 tablespoon chopped chipotle chiles
1/4th cup of freshly chopped coriander
2 teaspoons honey
1 tablespoon chia seeds
Truefarm Foods Organic Chia Seeds, 250g
1 clove garlic, minced
1/2 teaspoon ground cumin
Salt to season
Whisk together all of the ingredients in a glass or plastic measuring cup. Cover and chill for 10 minutes or overnight to plump up the chia seeds. Store chilled and use within 2 days for best flavour.
1 cup of grated Cauliflower (cauliflower rice)
1/2 cup of organic Multigrain health flour
Truefarm Foods Organic Multigrain Health Flour, 500g
1/4th cup of chopped fresh coriander
1/2 teaspoon of garlic minced
1 small onion minced
1/4th cup of buttermilk
Chopped green chillies (optional)
1/4th teaspoon of cumin seeds
1/4th teaspoon of coriander seeds
1/8th teaspoon of soda bicarb
Salt to season
In a food processor, or using a hand grater, pulse/grate cauliflower until rice consistency. In a bowl combine all the ingredients together and mix well.
Spray waffle machine with oil (if needed) and heat to a medium setting (if it has settings.)
Place a 2/3rd cup of the mixture in the centre of the waffle machine. Close and cook for approx. 5 mins, until browned, crispy and cooked through in the centre. Remove from waffle machine and place on a wire rack.
Repeat until all the mixture has been used up.
Serve hot along with chip dip and enjoy a healthy wholesome meal.
