
Healthy Granola cookies – Is quite an interesting, quick and flexible recipe and you can definitely enjoy these treats without guilt hanging around you. These healthy circles are packed with dried fruits, oats, dalia (broken wheat) and flax seeds. And the small portions size with minimum fat and sugar makes these granola cookies the ultimate health food.

These Healthy Granola cookies are now part of my families everyday routine – they go into lunch boxes, with the milk in evening, after a morning run, and even working in front of the computer every night. Especially with me; I have been nibbling on these a lot now a days saying these are very healthy. This one is my third batch since last week, because they are vanishing very quickly 🙂

Chopped almonds and pistachios for Healthy Granola cookies

I have used roasted dalia in the recipe, which usually you don’t find in granola recipes. Its a very simple and interesting addition as dalia not only makes the granola cookies more healthy but also adds to the texture and gives it a very unique crunch.

Reason I am calling this a flexible recipe is that you can change most of the ingredients as per your choice or availability. Any type of dry fruits to any kind of seeds (I have used roasted flax seeds; you can go with pumpkin seeds, sunflower seeds, or melon seeds). Go ahead and make these in your kitchen and share with me if you come up with something unique and yummy. Imagine the possibilities.

Few points to remember before you start :
1. These Healthy Granola cookies are baked in a cup cake tray because these is less binding of sugar and fat. Baking individuals makes a less crumbly mess and its easy to get them of one uniform size.

2. Line each cup cake case with a small circle of parchment paper; that will help you pull the cookie out easy.
3. When you add the prepared granola crumb to the cup cake tray; press it, press it, press it as hard as possible. You can use a clean glass or any smooth base to press into.
4. Don’t over bake, cookies will take hardly 10 minutes in the oven.
5. I have used a little melted chocolate on the prepared cookies. This is fully optional.
