We do Google our recipes very often when it comes to baking. But I believe we must keep few basic recipes in mind. Mostly I keep the ratio of flour, fat, sugar and liquid in my mind for my basic cookies, and cakes. Then I get the liberty to play around with the quantity I need to bake. Pound cake is like a mom of all butter cake variations seen nowadays. It is wonderfully rich, moist, tender and buttery with a lovely even golden brown crust. I rank pound cake way high, higher than many more complicated elegant looking cakes. The classic recipe of pound cake contained one pound each of butter, sugar, egg, and flour with the leavening coming from the whipping of sugar and butter.  

We break down the traditional formula and add some leavening (baking powder and baking soda) and an additional dairy product—buttermilk, sour cream or yogurt.

If you had seen the episode – Last week when – in Masterchef Australia –  ConVailas had to leave the kitchen because of a dense textured pound cake. It was a heart breaking episode for me. Con was good with cooking and plating, but baking was not his thing. If only he would have added a bit of leavening and baked it at the right temperature. I felt like getting into the t.v. and helping him. 😉

You can add a new twist to the recipe: adding a hint of cinnamon, some walnuts, cranberries, chocolate chips… or with a little cocoa powder in half of the batter and you will have wonderful marble cake. There are plenty of options depending on your mood, your tastes, and the ingredients you have at hand.
