Breakfast Idea : Zwiebelkuchen a German Recipe

Zwiebelkuchen ;is a complicated pronunciation,

But who cares, as long as the dish is yummy and easy to prepare 🙂 Just go with it.

It resembles pizza dough, which is really crispy at bottom.

The middle is tender and spongy, with the combination of succulent onions.

This dish is inspired by traditional treat from southern Germany.

Call it a pie, Quiche or pizza.

It is packed with caramelized onions and egg plant.

The bread dough rolled out thin gives a crisp base.

The toppings can be changed according to taste. I opted for onions and egg plant,

whereas the original recipe called for bacon and onion.

It works great for any get-together or pot luck party at a friends home.

And will definitely win you an appreciation.

RECIPE –

INGREDIENTS FOR DOUGH–

 1. 15 gm of dry yeast

 2. 150 ml of lukewarm milk

 3. 200 gm of bread flour

 4. 3 tablespoon of olive oil

 5. Half teaspoon of salt

 6. One teaspoon of sugar

INGREDIENTS FOR TOPPING–

 1. 3 onions

 2. one cup of egg plant cut into pieces

 3. 30 gm of sour cream

 4. One egg

 5. Black pepper and salt to taste

 6.Netmeg  just a pinch

 7. Oil to saute

METHOD–

First of all prepare your dough, as it needs first rise. In a container heat milk.

Hint: you can heat the milk in microwave, In just 20 seconds you get the right lukewarm

temperature,which is perfect for yeast 🙂 Now into this milk add dry yeast and sugar.

Cover it and leave it for about 5 minutes. In a large bowl add the flour, salt,egg and oil.

Make sure egg is at room temperature. Now add the milk and yeast to the flour mixture and knead it

into a dough. This may take about 15 minutes.Once you have a smooth dough put it in a clean container,

with a little bit oil. Cover it with a kitchen towel and leave it for a rise at a warm place.

 The dough needs to rest for about an hour or more;according to the weather conditions.

Let it rest till double in size. Now for the topping, cut the onions into rings, and saute them

in a pan with little bit of oil until translucent add the egg plant. Do not over cook , as we will be baking them

later. In an another bowl mix together egg, sour cream,nutmeg, salt and pepper, set aside.

Once the dough is ready,put it on a floured surface and knead it again.

Roll the dough out using a rolling pin into a flat large roasting pan, which has slight edge to it.

Then pour the onion mixture on top, evenly spread it all over. Then pour out the egg mixture on the top.

Cook it in a preheated oven for 30 to 40 minutes at 200* c . Or till you get the right golden brown color.

Serve this nice hearty dish ,very very hot.
