How to make cheese sauce at home for nachos.

We love nachos with that cheesy, dribbling, shiny pale-colored sauce. Have you noticed how all-hands approach the cheesiest nacho?
If you are sharing nachos with your kids, your hand will be halted at several less cheesy places and probably you will not be able to reach the yummiest cheesy part. Hence I always serve nachos in different bowls at home. We don’t share the nacho bowls. In fact, I like to relish the cheesiest part of my plate in the end.

I prefer doing nachos at home. We rarely order nachos from out. And believe me, at home, I make the most amazing nacho sauce. I don’t even use expensive cheddar when doing my cheese sauce. It’s a very easy recipe and turns out really good. Just regular block cheese from the fridge can make the uttermost luscious cheesy sauce at home.

There is a recipe video for you to refer to attached in the post. However, I have a few points to share with you before you go ahead with the recipe.
The base of the sauce is a white sauce, you have to really watch out for lumps when doing this. When you add milk to the butter and flour mix, it gets lumpy super quick because of the wavering temperature.
I have a very simple rule, I always turn off the flame and allow the butter and flour to cool down a bit before adding milk.
I gradually add the milk, while stirring the mix. Once I get a smooth lump-free mix I start the flame. You will be able to figure it out when you see the video.

I have used regular cheese from my fridge. Add the grated cheese to the mix when the flame is low.
Cook it further, only if you feel the need to bring in more thickness in the sauce. Remember that the sauce will thicken even further as it cools.
It is important to taste the sauce and adjust the seasoning, if required.


Nachos Cheese Sauce

- 20 gm butter

- 1 cup milk (room temperature)
- 1/4th tsp turmeric powder https://amzn.to/3jqaGGA
- 1/4th tsp Kashmiri red chilly powder https://amzn.to/2LAZhr2
- 1 tsp salt
- 1 cup grated cheese https://amzn.to/3q282ZV
Instructions
- In a heavy-bottomed pan https://amzn.to/3oXpIEH add the butter and heat it on a low flame. As the butter melts add in the flour and cook for a minute on low flame.
- Turn off the flame and gradually add the milk. Make sure to continually stir https://amzn.to/2MN29l9 the mix so you get no lumps.
- Add in the turmeric powder, Kashmiri red chilly powder, and salt. Now turn on the flame and cook till the sauce thickens. Don't forget to stir as the sauce cooks. Add in the grated cheese and cook further to achieve the right consistency.
- If you plan to serve the sauce later, then don't overcook it. The sauce will thicken further as it cools.
