Switch your chai biscuit with these healthy oat cookies. It will be a small step towards a healthy you. These cookies also make a perfect snack for kids. Those few hours before dinner time, where you duck your head in the fridge looking for food. One oat cookie will coax those hollow monstrous echos of the tummy.

These are hearty, wholesome, chewy, and very satisfying cookies. I bake a lot, and healthy recipes are fulfilling reimbursement to my spirit.

Healthy Oat Cookies

The recipe call for a  egg, which is easy to replace.  To substitute egg in these cookies, do the following. 

Soak one tablespoon of flaxseed powder in three tablespoons of lukewarm water. Stir it once and let it sit on the kitchen counter for 10-15 minutes. This mix will work as a substitute for egg in this recipe.

The recipe calls for coconut oil. Which is far healthier than butter. You will find different varieties of coconut oil 

Refined coconut oil is typically cheaper and unlikely to have the true coconut flavor and smell. It falls short on nourishing qualities too. 

Virgin coconut oil is an unrefined version with a lighter taste. Virgin coconut oil is deemed to be of higher quality than refined coconut oil and is said to be richer in antioxidants. 

For baking I prefer virgin coconut oil. In my recipe. You will find it easily in grocery stores. Or sharing a link here too.

Healthy Oat Cookies

Coconut sugar, sometimes called coconut palm sugar, comes from the sap of the coconut palm tree — not the coconuts. This sugar adds to the nutritional content of the cookies. The deep caramel goodness of coconut sugar adds to the color and taste of these cookies. Coconut sugar is also easily available in general grocery stores. you can add to many more recipes. I am also sharing a link here for you if you find it difficult to find.

I have used almonds and cranberries in this recipe, you can play with the different varieties of nuts and seeds in this recipe according to the choice and availability.

In the video, I have missed showing you one step. Which is, to roughly dab and shape the cookies (round) once you put them on the baking tray. It clicked to me later that, I missed recording that step in the making of the cookies. It will contribute to the appearance of the cookies.

  • 1/8th tsp Salt

  • 1 tsp Cinnamon powder https://amzn.to/2POhR0Y
  • 1/3rd cup  coconut sugar  https://amzn.to/3udo85d
  • 1/4th cup coconut oil https://amzn.to/336lLFv
  • 1/2 tsp vanilla  https://amzn.to/3eeXeEC
  • 1 whole egg (scroll up for substitute)
  • 1/4th cup chopped almonds  https://amzn.to/3edB99u
  • 1/4th cup cranberries  https://amzn.to/3uqrIsZ

Instructions

  • Preheat the oven at 180* C and line a cookies tray https://amzn.to/2Rnlk6M with parchment paper https://amzn.to/3eefq0M and set aside.
  • In a bowl add all the dry ingredients oats, whole wheat flour, salt, baking powder, and cinnamon powder. Use a wire whisk to mix them all very well.
  • In another bowl, add the coconut sugar, coconut oil, egg (room temperature), and vanilla extract.
  • Add the dry ingredients to this mix and combine them both using a spatula. Add in the chopped almonds, cranberries and mix them into the prepared batter.
  • Scoop the cookie batter onto the prepared baking tray using a spoon, as shown in the video. Roughly dab and shape them and bake for 15 minutes at 180*C https://amzn.to/2QI6GYa
  • Once done, let the cookies cool down on a wire rack. Store in an airtight container. Enjoy!
