Mini Mud Cake Recipe 

This mini mud cake is eggless and takes only 10 minutes of baking time. This is a treasured recipe, from my cherished food journal. I do go back to some key recipes over and over again to accomplish faultless results. A few moderate tweaks and I get triumph worthy bake. It’s the mind of a baker, which can conceptualise the process and the result of the bake, stationing from the base recipe. I do that many times, and this mini mud cake is a wedge from one of my dearest recipes.

It’s an effortless recipe, but you must use quality ingredients, so the outcome is great. Which makes you adore this mini mud cake. When it comes to simple recipes brilliance can be expected only when the base ingredients are of good quality. In this recipe, the cocoa powder and the chocolate piece you use will wrap up the experience.

The cake will be gooey, as the name suggests. You should expect an enriched chocolaty experience from this dessert. Hence I didn’t want to bake a lusty massive chocolate mud cake, because it gets difficult to control the desire to indulge in such an inviting treat when you bake them at home. Small bakes helps you relish in moderation. Sharing a recipe that would bake into a treat for two is perfect. The measurements shared below will make you two mini mud cakes. 

These cakes are perfect when you bake them in ramekins. And you can serve them in ramekins themselves, as they look classy and stunning. 

Don’t bother to unmold them from ramekins, the top-notch addition would be a scoop of vanilla ice cream on the top when you sever them. If these mud cakes are warm it would be outstanding.

Equipment

  • 1 OTG
  • 2 Ramekins
  • 2 Mixing bowl

Ingredients

  • 1/2 cup cake flour
  • 1 tbsp cocoa powder https://amzn.to/3spW1Bn
  • a pinch of salt
  • 1/4th tsp baking powder
  • 1/3rd cup sugar
  • 1/2 cup warm milk
  • 30 gm melted butter
  • 4 pieces of couverture chocolate https://amzn.to/3BWLAby
  • 1 tsp butter to coat the ramekins
  • 1 tsp cocoa powder to dust the ramekins https://amzn.to/3spW1Bn

Instructions

  • In a bowl add flour, cocoa powder, salt and baking powder. Pass all these dry ingredients through a sieve. 
  • Keep this bowl of dry ingredients aside. In another bowl, you add sugar, warm milk, and melted butter. Make sure that the milk is lukewarm, not very hot and definitely not cold. Whisk to combine these wet ingredients.
  • Now pour this mix into the bowl holding the dry ingredients. 
    Mix all, using a whisk. Make sure not to over mix the cake batter. Whisk it only till combined.
  • Prepare your ramekins by slightly coating the inside of the ramekins with butter. Dust it with cocoa powder. See the video for reference. https://amzn.to/3BXDmzN
  • Pour the prepared cake batter in these ramekins and place a piece or two of couverture chocolate in the middle of the batter in the ramekin. Slightly press so it sinks in. Bake for 10 minutes at 180*C. 
    Don’t overbake, 10 minutes for a cake this size is enough.
  • You can not even check the doneness of the cake with a toothpick because it will come out wet because of the chocolate piece in the centre. 
    But the texture of the cake is supposed to be gooey, so the oozing chocolate middle is awesome.
