There comes a time in life, when we start to think about health. Being healthy becomes a priority, and I am not talking about only physical contour. Emotional well being, gut health take precedence over everything else. As a young adult, I was never too conscious about food. Lucky me, I have good food habits, fruits and vegetables are my favorites, so never faced any trouble following that route. But was never ultra conscious about what I am eating. All kinds of packet foods, fried foods, processed foods have gone into my system without an inch of hesitation.

Now I have started to think, now I feel there is too much maida in a pizza slice, there is too much sugar in a cookie, there is too much fat in readymade mayonnaise.

Creating healthy substitutes for many of my favorites is on the agenda. This super healthy beetroot dip is one of those recipes. Healthy and delicious is possible. This recipe is an exemplar of the same.

I would like to share a few points with you before we go ahead with the recipe. 

The thinner cut slices of the beet will bake quicker.

When you blend the roasted beet, make sure to take a smaller blender jar. 

You might not get very fine paste after blending it, in that case once pass it through a sieve. In the end, we are looking for a fine paste of roasted beet. 

In the recipe, we have used hung yogurt. Never blend the yogurt in a blender jar, it will become watery. It will lose all that thick creamy consistency. Always use a  whisk to cream the hung yogurt. 

Check and adjust the seasoning, before serving. It’s a beautiful dip, you will replace that fat-loaded mayonnaise with this very soon.

Ingredients

  • 1 Big Beetroot
  • 1 tsp Coarse salt https://amzn.to/3uMW7kI
  • 1 tsp Black pepper
  • 1 tsp Cumin https://amzn.to/3trfMGV
  • 4-5 Cloves of Garlic
  • 1 tbsp Olive Oil https://amzn.to/3dZINmd
  • 1 Cup Hung Yogurt

Instructions

  • Cut the wedges of beetroot and place them in a foil https://amzn.to/329x5zZ. Sprinkle salt, pepper, cumin garlic cloves, and drizzle oil on the top. Roughly wrap the beet in the foil and bake https://amzn.to/3ddqaMH for 30-35 minutes at 200* C in a preheated oven, until tender.
  • As the roasted beet cools down, blend it in a mixer https://amzn.to/3dVcoxq to get a very fine smooth paste. If required pass it through a sieve.
  • In a bowl whisk the hung yogurt, using a wire whisk. Add in the pureed beet paste. whisk them together and your beetroot dip is ready. Check and adjust the seasoning before. serving. https://amzn.to/3te58mt
